How to Grill Indoors for the Superbowl and Never Miss a Play!

As we embark on a yearly tradition of watching the Super Bowl with family and friends, we start to think about what we should serve at our gathering.  Should we go easy and just throw out some chips and dips or maybe we get a little more creative and healthier and turn to our trusted BBQ grill, better yet let’s bring it inside and never miss a play with a countertop grill!

Grilling has commonly been a way for the gents to show off their prowess at cooking.  Standing outside around a hot grill, comparing grill marks, raving about how juicy the steak looks and showing off what they know about food temperature, when it’s done and all that jazz just by poking it with your grill fork!  Don’t deny it, you know it’s true!

Whether it’s a T-Bone Steak, ribs, BBQ chicken or kabobs there are so many reasons to use your electric grill instead of eating the same old thing! Grilling is one of the best ways to remove the fat and grease from your meats, hearing that sizzle and watching the fat drip through the grates as you turn your food, you can picture it, can’t you?  

February is a cold month for many folks so let’s take the grill indoors and never miss a play! With countertop grilling you can still have all of that without missing the Super Bowl game and let’s face it, the commercials are pretty good too! 

What’s on the Menu? 

In honor of the San Francisco 49ers we are headed to the seafood section of the grocery store for some fresh fish for our grilled fish tacos! Tacos are a great way to feed a lot of people without a lot of fuss or spending a lot of money!  You can go the least expensive route and buy a bag of frozen fish fillets or purchase fresh fish at your favorite store!

Fish is a great source of protein, it’s filling without making you feel stuffed and when you pair it with a chopped mango salsa and chopped cabbage you have the makings of a crowd pleaser! To get started pick your favorite fish, we will go with Tilapia because it has a milder fish taste, just in case you have some picky guests.

Crowd Pleasing Fish Tacos

What you’ll need to make the rub:

  • 1 tsp Chili powder
  • ½ tsp cumin
  • ½ tsp garlic powder
  • 1 tsp paprika
  • ½ tsp ground black pepper
  • ½ tsp onion powder

 Taco Fixings

  • 4 Tilapia filets
  • 10 6 inch soft corn tortillas ( you can purchase street taco size to make smaller portions)
  • 2 chopped avocados
  • 4-5 limes cut in wedges
  • 2 cups shredded cabbage (you can purchase shredded cabbage in a bag)
  • 3 ripe mangos
  • 1 red bell pepper
  • 1 red onion
  • ¼ cup fresh cilantro
  • 1 jalapeno
  • 1 cup cotija cheese


  1. Preheat your electric grill to 450
  2. Using the premade rub, rub your fish fillets so they are fully covered and place them on foil and drizzle them with a little olive oil
  3. Place your foil and fillets on your heated grill, using oven mitts or tongs as needed
  4. Grill fillets 10-15 minutes until flaky and cooked
  5. Chop your avocado
  6. Slice your lime wedges
  7. Chop your mango, red bell pepper, onion, jalapeno and cilantro and combine in a bowl, drizzle with the juice of 3 lime wedges and mix well.
  8. You can season this with salt and pepper to taste
  9. When your fish is done, remove it from the grill with oven mitts or tongs and place in a separate bowl
  10. Chop up your fish fillets so you have an easy to spoon bowl of fish
  11. Remove the used foil from the grill with oven mitts and discard in the trash
  12. Using the heated grill place your corn tortillas on the grill and heat for about 1 minute per side, you just want them warm and soft.
  13. Layer your warm tortillas with your fish, cabbage, fresh mango salsa and a spoonful of the Cotija cheese on top. Serve each plate with a lime wedge and chopped avocado. Enjoy!

Kansas City is known for it’s amazing BBQ rubs and sauces, the thick, sticky sauce that is brushed on in the last few minutes of grilling. In honor of these Super Bowl Bound athletes we’re making BBQ Chicken!

To start we will make the rub!  Kansas City rubs are known for their spice or “kick” which is fitting since we are watching football!

Kickin’ BBQ Chicken

To make your dry rub you’ll need the following:

  • 2 cups brown sugar
  • ½ cup dry mustard
  • 1 tbsp cayenne pepper
  • 1 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • Salt and pepper to taste
  • Mix everything into a bowl and rub your chicken breasts until they are coated on both sides
  • Cover the bowl and allow to sit in the refrigerator up to an hour or overnight if you prefer

Let’s Make some Kansas City Style BBQ Sauce

  • 2 tbsp vegetable oil
  • 2/3 cup chopped onion
  • 3 cups water
  • 2-6oz cans of tomato paste
  • ½ cup brown sugar
  • 2/3 cup apple cider vinegar
  • ¼ cup molaasses
  • ¼ tsp cayenne pepper
  • ¼ tsp smoked paprika
  • 1 tsp salt
  • 1 tsp ground black pepper


In a small sauce pan on your stove, using medium high heat, heat the oil and add the onion, cooking until the onion is soft and translucent. Add the remaining ingredients in a large bowl and mix together. Add to the sauce pan and let the whole mixture simmer for about 30 minutes. If you are making this ahead of time you can refrigerate your sauce after it has cooled.

Let’s get the chicken on the grill!

Preheat your grill to 450°, once it’s ready to go place your chicken breasts on the grill and cook for about 8 minutes.  If your indoor grill has a cover, go ahead and cover it so you keep the heat in.  After 8 minutes, flip your breasts over and cover your grill again. Continue grilling until your chicken reaches 145° internally.  Once it reaches 145°, it’s time to baste your chicken with your Kansas City Style BBQ Sauce. You will use about a cup of sauce for basting because you want the breasts fully covered! Replace your cover back on your grill and resume grilling until your chicken reaches 165°. 

Remove your breasts from the grill, placing them BBQ sauce side down on your serving platter, brush a little more sauce on the other side and serve! You can use this rub and sauce recipe for burgers, ribs or pork chops if you prefer! Now settle in, the kickoff is minutes away!
