Shallot Bacon Mashed Potatoes

  • 6 slices bacon, chopped
  • 3 large shallots
  • 2.5 pound Yukon Gold potatoes, halved
  • 1 cup Chicken broth
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.5 cup butter
  • 8 ounce cream cheese


  1. Place the Inner Pot in the PowerXL Quick Pot. 
  2. Cook the bacon in the PowerXL Quick Pot on the Saute, Vegetable setting. Add the shallots and cook for 5 mins. until crispy. Remove and reserve the bacon and shallots.
  3. Place the potatoes, chicken broth, salt, pepper, butter, and cream cheese in the Inner Pot.
  4. Secure the Lid and set to Pressure, Vegetables, and set the time to 12 mins. 
  5. Naturally Release the pressure, and mash the potatoes.
  6. Top with the shallots and bacon, then serve.
